Chicken & Broccoli SoupQuick & Easy and especially good on a cold night1 stick butter (4 oz.)1-2 onions, choppedSaute onions in butter. (You can use margarine, I just use butter for everything!)1 lb. Velveeta1 can cream of chicken soup1 can cream of mushroom soup1 can cream of celery soup2 13-oz. cans chicken2 soup cans milk2 14-oz. pkgs. frozen broccoli florets2 cans sliced mushroomsCook broccoli according to pkg. directions. Drain. Melt cheese into onion mixture. Add all other ingredients and cook on low until hot.I have this on the stove now for supper. I was out of cream of mushroom soup (Jerry was going to throw me one but either she couldn’t pitch far enough or I was a bad catch, it didn’t make it here) so I used 2 cans of celery soup and 1 cream of chicken.
You can use Mexican Velveeta instead of regular and if you want it even hotter you can add a can of Ro-Tel tomatoes. I’ve never used the Mexican Velveeta but sometimes add the Ro-Tel tomatoes.

HettieLynn, I’m sending this on to my baby sister in AZ….she loves those hot chilies!I’ll try making it a wee bit milder for us. Hubby loves soup!!

Retta, it’s really very mild unless you use the Mexican Velveeta and Ro-Tel tomatoes. I didn’t use either tonight and it wasn’t hot at all. It even turned out o.k. without the COM soup.
